This rasterizes the document. Removing colour means rewriting every colour instruction and image in the file, which cannot be done safely in place - so each page is re-rendered as a grayscale image.
The result looks right and prints correctly, but the text is no longer selectable or searchable, and the file is often larger than the original. Use this when preparing something to print or fax, not when you need to keep editing it.
